Ingredients:
1.Egg - 2
2.Onion - 1 thinly sliced
3.Ginger - 1 tbsp(paste)
4.Garlic - 1 tbsp(paste)
5.Green Chilli - 2 finely chopped
6. Red chilli powder - 1 tsp
7. Corriander powder - 1/2 tsp
8. Turmeric - 1/4 tsp
9. salt
10. Whole red chilli - 2
11. mustard - 1/2 tsp
12. oil - 2tbsp(authentic Kerala egg roast would be made in coconut oil)
13.Curry leaves - 8-9 leaves
14. Cilantro - 2 tbsp finely chopped

1. Boil the eggs(hard boil).
2. In a wok,splutter the mustard seeds when the oil is heated.
3.Add curry leaves and whole red chillis.
4. Saute the ginger ,garlic and green chilli until translucent,add the sliced onion.
5. Add salt and turmeric and saute onion on low flame until translucent.
6. Add chilli powder and corriander powder .
7. add the eggs and saute in low flame until eggs get coated with the masala.
8. Put the lid and cook for another 3-4 mins.
9.Garnish it with finely chopped cilantro leaves.
