Vegetable Biriyani




Ingredients:
1.Basmati Rice - 1 cup
2. Onion - 1 thinly sliced
3. Ginger - 1 Tbsp
4. Garlic - 3-4 pods
5. Green chilli - 2
6. Tomato- 1 chopped
7. Pudina leaves - 1/2 cup chopped
8. Cilantro - 1/2 cup chopped
9. Cauliflower - 1/3 cup(cut into small pieces)
10. Potato - 1/3 cup(cut into small pieces)
11. Green peas - 1/2 cup
12. Carrot - 3/4 cup(cut into small pieces)
13. Whole garam masala- (3 cloves,2 cardamom, 1 cinnamon stick, 1 bay leaf)
14. Rasin - 1/4 cup
15. Cashew - 1/4 cup
16. Ghee - 3 tbsp
17. Turmeric - 1/4 tsp
18. Salt

Method of Preparation:
1. Soak rice in water and keep aside.In a pressure cooker, heat ghee and fry the whole garam masala,cashew and rasin.
2. Add the crushed ginger,garlic and green chilli and stir until golden brown, Add onion to it.
3. Add pudina and cilantro leaves and stir well.
4. Add salt and turmeric and follow it with chopped tomatoes.
5. Cook the tomato well for 1-2 min.
6. Add vegetables and rice and stir well.
7. Now add 2 glasses of water and let the cooker whistle ones in medium flame. Turn off the flame immediately.
8. Serve the vegetable biriyani hot with raita.
