Ingredients:
1.Prawns - 1 lb clean and devein
2. Basmati rice - 1 1/2 cup
3. Red Onion - 2 thinly sliced
4. Ginger - 1 tbsp crushed
5. Garlic - 1 tbsp crushed
6. Green chili - 2 crushed
7. Tomato - 2 cut into cubes
8. Coriander leaves - 1 cup finely chopped
9. Pudina/Mint leaves - 1/2 cup finely chopped
10. Whole garam masala - 1 tsp(3 cardamom,3 clove,1 cinnamon stick, 2 bay leaves,)
11.Chili powder - 1 tsp
12.Coriander powder - 1 1/2 tsp
13.Curry Leaves - 9
14. Ghee - 3 tbsp
15. Cashew nut - 1/2 cup
16.Rasin - 1/2 cup
17.Garam masala powder - 1/2 tsp
18 Salt
19.Sugar- 1 pinch
20.Onion - for garnish
21. Egg - 2 boiled
Method of Preparation :
1.In a pressure cooker heat 1 tsp of ghee and saute half the whole garam masala.
2.Add the soaked rice and add 2 3/4th glasses of water and salt to it.Cook exactly for 1 whistle
3.In a pan heat 1 cup of water with salt and turmeric,add the cleaned prawns when water begins to boil, cook the prawns just right for 5-7 mins, keep it aside, save the cooked water in another bowl.
4.In a wok heat 1 tbsp of ghee,add whole garam masala, and curry leaves.
5.Saute the sliced onion, ginger,garlic and green chili in medium flame with 1/4 tsp of salt.
6. Saute until golden brown.
7.Add the chopped corainder and mint leaves to it and saute for anothe 2 mins.
8. Add the tomatoes and 2 tbsp of the prawns cooked water(broth) and cook to 5 mins with closed lid.
9. Stir and cook until the tomatoes are mushy.
10. Add turmeric,chili ,coriander powder and garam pasala powder.
11. Add a pinch of sugar.
12. Add the cooked prawns and switch of the flame and keep it for 5 mins.
13. In a pan heat 1 tbsp of Ghee and fry the cashew, rasin and onion (to golder brown) one by one.
14. In a baking pan , coat the bottom of pan with some ghee.
15.Layer rice followed by prawns gravy,then cashew,rasin, fried onion, fresh onion , coriander leaves. and again rice.
16.Top the second layer of rice also with prawns gravy,cashew,rasin, fried onion, fresh onion,coriander leaves and boiled egg.
17.Cover the pan with foil paper fully sealed.
18.Preheat the oven at 350 degree C and bake the biryani for 7 mins.
